That same fresh, moist, denseness that zucchini bread is so loved for, but with a zesty pop of flavor from ripe, fruity blueberries.

Ingredients For Blueberry Zucchini Bread
- 3 eggs, lightly beaten
- 1 cup vegetable oil
- 3 teaspoons vanilla extract
- 2 1/4 cups white sugar
- 2 cups shredded zucchini
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon ground cinnamon
- 1 pint fresh blueberries
Directions For Blueberry Zucchini Bread
- Heat your oven to 350 degrees F. Prepare 4 min-loaf pans by lightly greasing them.
- Beat together the eggs, oil, vanilla, and sugar in a large bowl. Next, fold in the zucchini. Add the flour, salt, baking powder, baking soda, and cinnamon and combine well. Gently fold in the blueberries. Pour the batter into your pans.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Cool for 20 minutes in the pans, then move to wire racks and allow to cool completely.
